Peter Johnson and Van Scholten are mushroom farmers in Buffalo.
I know, who knew, right?!
Rusty Bucket Mushrooms is open for business.
Now, they’re hoping to expand things. They are in a contest that could help their start-up farm – really grow. Right now they farm indoors in Buffalo, but, Peter tells me they have big goals, “In short we are a start-up mushroom farm currently indoors in the city, but will be expanding to an outdoor seasonal operation this coming spring, and the grant would make things go a heck of a lot smoother!”
So, lets help this local duo win the $15,000 Cultivating Change grant!
I asked Peter – why mushrooms, “There’s tons of great things about mushrooms! First, they’re a great source of vegetarian protein that can be sustainably grown on what would otherwise be agricultural waste. Second, they have many other amazing health benefits. Third, they can bring a good price at market and can be grown without a gigantic initial investment, meaning a business opportunity that doesn’t require selling one’s soul to get started. Also, I just love eating them, and most people haven’t tried most of the mushrooms we grow. Its really rewarding to introduce people to delicious, healthy new food they don’t have much opportunity to get anywhere else.”
You can find them at Farmer’s Markets in the spring – just like their Facebook page for more information.
